Usucha · the classic

Hot, whisked, pure.

2g · two scoops70ml water80°C — not boiling15 seconds
  1. Sift two scoops into a warm, dry bowl.
  2. Pour 70ml of water at about 80°C — just off the boil.
  3. Whisk briskly in a “W” from the wrist until a fine foam forms.
  4. Sip while it's alive. The foam is the moment.

Cold, bright, vivid.

  1. Whisk (or shake) the matcha with a splash of cool water until smooth.
  2. Pour over a tall glass of ice.
  3. Top with cold water or coconut water. Stir once.

Milk, warmth, no sugar needed.

2g30ml hot water180ml milk of choice
  1. Whisk the matcha with a small splash of hot water into a smooth paste.
  2. Steam or froth your milk — oat and whole milk foam best.
  3. Pour slowly over the paste. First-harvest leaf is naturally sweet.

  2. Seal and shake hard for ten seconds.
